According to the CDC time & temperature abuse is the leading cause of food borne illness. What exactly does that mean? It means that you do not cool down cooked food properly or fast enough. Also it means that you do not reheat food properly or fast enough. The temperature danger zone is 40 degrees to 140 degrees. Food in this temperature range can grow bacteria in as little as four hours. So here are the things that you can do to help: Put food uncovered (to allow heat to escape) in the fridge as soon as possible. When reheating food make sure that it is heated quickly to at least 140 degrees while stirring constantly to ensure even heating. Doing these two things can greatly reduce your risk of getting sick.
